Broccoli Soup

Broccoli Soup

INGREDIENTS

    4 cups of broccoli florets with stems
    1 teaspoon butter
    1/4 cup of milk
    2 cups water or vegetable broth
    Freshly ground black pepper
    Salt to taste

INSTRUCTIONS
  • Steam the broccoli until tender in a steamer or a pressure cooker.  Allow it to cool.
  • Puree the broccoli along with 1 cup of water or broth until smooth. Strain to remove any residue.
  • Transfer the broccoli to a sauce pan, add the butter, the milk and the remaining water and bring to a boil and simmer for few minutes. Add salt and crushed black pepper to taste.
  • Serve the Broccoli Soup with warm dinner rolls.
